It looks like a normal loaf of bread. Until you cut the first slice. Inside, you’ll discover a deliciously sweet and creamy cheesecake filling, with just a hint of orange flavor. It takes a good hour and a half to bake, but the wait is worth it. You don’t even need to spread any toppings on this bread.
- 1½ c. sugar
- 1/2 c. butter
- 2 eggs
- 1 c. pumpkin
- 1/3 c. water
- 1 3/4 c. flour
- 1/4 tsp. baking powder
- 1 tsp. soda
- 3/4 tsp. salt
- ½ tsp. cinnamon
- 1/4 tsp. cloves
- ½ tsp. pumpkin pie spice
- 1/2 c. raisins (optional)
Cream sugar and butter. Add eggs. Add pumpkin and water; mix well. Add dry ingredients. Mix to moisten. Don’t over-beat. Fold in raisins. Pour in greased loaf pan about 2/3 full. Bake at 350° for 1 hour for large loaf. Test with toothpick.
Check for doneness by inserting a toothpick or knife into the bread. If the toothpick or knife comes out clean, the bread is done.
