Cheese. Cheese! Plenty of cheese. How can anyone not like cheese?

3 cups peeled and cubed russet potatoes, boiled until tender but not mushy.
1 lb. thinly sliced smoked sausage*, boiled until tender but not mushy
4 tablespoons butter
1 onion, sliced into thick half circles
1 red bell pepper and green, cut into 1-inch pieces
4 tablespoons flour
2 cups half and half or milk
Salt and pepper to taste
1/2 lb. Velveeta cheese, cubed
1/2 cup grated sharp cheddar cheese
1/4 teaspoon smoked paprika
