Creamy Burrito Casserole

 

Do you like burritos? Of course you do!!! Everyone loves it! And I’m no exception. Today, I’m trying to put a new spin on traditional burritos and cook a burrito casserole.

It’s like several burritos wrapped in one dish and baked in the oven. To me, it’s a kind of Mexican lasagna. Layers of wheat tortillas with a creamy mushroom sauce, juicy taco-flavored beef, refried beans, and melted Mexican cheese on top… Isn’t that delicious?

Ingredients:

  • 1 lb ground beef
  • 1/2 onion, chopped
  • 1 package taco seasoning
  • 6 large flour tortillas
  • 1 can refried beans
  • 2 -3 cups shredded taco cheese or cheddar cheese
  • 1 can cream of mushroom soup
  • 4 ounces sour cream

Instructions:

  • Brown beef and onion; drain.
  • Add taco seasoning and stir in refried beans.
  • Mix soup and sour cream in a separate bowl.
  • Spread 1/2 sour cream mixture in the bottom of a casserole dish.
  • Tear up 3 tortillas and spread over sour cream mixture.
  • Put 1/2 the meat bean mixture over that.
  • Add a layer of cheese.
  • Repeat the layers.
  • Sprinkle cheese over the top and bake, uncovered, at 350Β°F for 20-30 minutes.

WHAT TO SERVE WITH THE BURRITO CASSEROLE?

You can serve the burrito casserole with salsa and chips, a spring salad, sliced avocado or guacamole, chopped fresh lettuce leaves or just a dollop of sour cream. Spanish rice or pasta mix can also be a good choice.

CAN WE FREEZE THE BURRITO CASSEROLE?

Of course you can freeze the burrito casserole! Cover the casserole with a freezer-safe lid or foil, or if you have leftovers, place them in an airtight container or freezer bag and place them in the freezer.

Before baking, let them thaw and bake at 350 degrees for 20 to 25 minutes or until heated through.
